I don't care if it's a chain, their gorgonzola sliders with fried onions are the crap.  And the spicy meatball pizza is garlicky even by my standards.

At least Matchbox is a local chain.

This recipe was great and easy to do:


Hungry Girl's Healthy Southwest Slow-Cooker Chicken Recipe

Anyone who loves Southwestern flavors will appreciate this recipe. Keep it simple, or dress it up with your favorite toppings!

Prep:  10 minutes 
Cook: 3 - 4 hours or 7 - 8 hours, plus 45 minutes 


Ingredients:

1 lb. raw boneless skinless chicken breasts, halved

1/4 tsp. each salt and black pepper

One 15-oz. can black beans, drained and rinsed

1 cup frozen sweet corn kernels

3/4 cup chopped onion

1/2 cup chicken broth

1/4 cup lime juice

3/4 tsp. ground cumin

2 cups roughly chopped cauliflower or 1 1/2 cups cauliflower rice

Optional topping: chopped fresh cilantro


Directions:


Place chicken in a slow cooker, and season with salt and pepper. Add all remaining ingredients except cauliflower. Stir to mix.

 Cover and cook on high for 3 - 4 hours or on low for 7 - 8 hours, until chicken is fully cooked.

 Meanwhile, if starting with roughly chopped cauliflower, pulse cauliflower in a blender until reduced to rice-sized pieces.

 Transfer chicken to a large bowl. Shred with two forks.

 Return shredded chicken to the slow cooker, and mix well.

 Add cauliflower rice to the slow cooker, and stir to mix.

 If cooking at low heat, increase heat to high. Cover and cook for 45 minutes, or until cauliflower rice is tender.

This recipe is easy to follow and comes out great

Saucy Greek Baked Shrimp

Ingredients
1 lb raw shrimp, peeled and deveined
1 14.5oz can diced tomatoes
1 tbsp olive oil
2 garlic cloves
½ tsp oregano
1/4th tsp salt
pinch of red pepper flakes
3/4 cup crumbled feta cheese

Directions
1.Preheat oven to 375.
2.Heat the oil over medium heat in a large skillet and add the garlic. Saute for about one minute until fragrant then add the can of tomatoes and the spices. Simmer for another three minutes.
3.Place raw shrimp in an oven-proof dish and pour sauce on top. Crumble feta over the sauce and bake for 15-20 minutes until shrimp are done.
4.Serve with pasta or chewy sourdough bread.

Yield: 2-3 servings

The wife just emailed me to say she's not feeling well and that I'm on the hook for dinner tonight.  Gonna give this a try.  What size shrimp do you use?

Sub bulbs for cloves and double and size won't matter.  Take it from a skinny white guy.

I usually use the entire can, for the tomato flavor mixes in better.  But it probably doesn't matter.

Tried this tonight for supper.  Prior to tonight, I've only had summer squash because I had no idea how to prepare the other types of squash.  I thought it was very good.  Had a mild and kind of buttery taste to it.  Went well with the grilled asparagus and salmon I fixed. 

I prepare my salmon using the rub shown below and throw a chunk of maple wood on the grill to give it a very well suited smokey flavor that's not over-powering.

This is definitely true among my generation. Anecdotal, but one of my friends who just moved to Nashville refuses to go to chains to eat lunch or dinner. She only goes if we're on the road somewhere or it's got to be a super-quick thing. I don't really mind chains at all (love me some Cookout), but I generally avoid any and all chains if I can. Most kids my age are the same, too. Small sample size, but I believe it.

One of the few chains I've seen universally LOVED among my age group is Chik-Fil-A. All the others are hit-or-miss with people.

That stuff is so good- I like making ribs, but swamp venom is about perfect for pork or chicken

I've preferred the indies for decades now.  Yet, I get the eye rolls when I pass by the typical fast food joints searching for a diner or a BBQ joint.   Affirmation!

Cook Out is excellent fast food.  Huge menu, solid quality and inexpensive.

I don't understand the love for Chik Fil A, at all.  It's hard to screw up a French fry but those waffle fries gross me out :spaz:
