I first had Sriracha ~1990 when I lived in Vancouver...back then it was pretty much only found in pho joints and Chinese greengrocers.  It's just so damned good.  Yeah, it's gotten trendy (as trendy as a condiment can be anyways), but so freaking what and good for Mr Tran  :D

Trying this meatloaf recipe tonight: http://southernfood.about.com/od/meatloafrecipes/r/r80127b.htm

Modifications are that I added three cloves of garlic, deleted the bell peppers (don't care for them), and used 2% milk instead of whole milk (because that's what we buy). It's in the oven now....I'll comment later on how it turns out. Naturally, I made more bacon than it called for and learned the hard way that brown sugar–coated bacon will stick to the paper towels you use to drain it (but, on the positive side, the paper towel scraps I wound up eating didn't interfere with the taste of the bacon).



Edited to add: It was decent. I'll make it again but will tweak it further, main thing being less barbecue sauce. The recipe calls for half a cup, but I only has a quarter-cup and so used that. We both felt it was a bit too much even with the reduced amount. Ms1995hoo thinks it needs less onion. On the whole, though, a good recipe, stayed moist without becoming gloppy.

Oh No Blue !  Please wake up to the knowledge of adding chipotle salsa to meatloaf ingrediants !  It's the best meatloaf EVER !!!

I find that creminis are the best thing to add to meatloaf. Crushed anchovies rank a close second.

The cool thing about mushrooms and anchovies is they enhance the flavor of beef. Anchovies are the base of worchestshire sauce but smashing them is better and you don't have to deal with all the chemical crap. Chipotles are excellent as a condiment.

I thought about that. But last Sunday I used mushrooms in a steak recipe. Woke up at 4:30 AM, had the runs for half an hour, then puked for 15 minutes. So for now I'm laying off mushrooms.

Plus when I make a recipe for the first time I like to follow it pretty closely (unless I hate an ingredient, as is the cae with bell peppers) so as to see how it is. It's harder to judge when you change too many things.

Making meatloaf tonight,  thought about fish sauce,  but I'm sticking with my standard shallot, green onions,  tomato paste and herbs for flavor
