We never eat turkey at Christmas. For Thanksgiving I'm cooking Cornish game hens instead. I first tried that for Thanksgiving two years ago (different recipe than the one linked here; I grilled them on wood planks that year) and we liked each person having an individual bird, no need to carve the bird (and take up excess space on the counter), etc. It will be a little weird this year having white wine instead of red, but so what.

anyone ever try a dry brine for their turkey? Essentially rubbing kosher salt underneath the skin?

No way. At least not on Thanksgiving or as some of us like to call it: Turkey Day. Biden will issue pardons for a couple of them and the rest are fair game.

Yeah, and patted it down and basted it with sherry.  It was good but I think I'd stick some butter under the skin next time

the video I just watched said to salt the outside (not under the skin) it about 24 hours before cooking and leave it in the fridge uncovered. Then, before cooking, coat the outside with butter. I'm going to give it a try. I usually do a wet brine and it's a royal PITA

We have an extra fridge that’s mostly for beer. So I’ll use that

Make sure it’s below 38f and you should be fine.
