I doubt I will ever actually make this. Too many ingredients and too much hassle. But I want to try this. The URL alone will tell you why.

I was just saying something to my wife about this. She makes very good twice-baked potatoes and her reply was, “So it’s just a twice-baked potato with all that crap piled on it?”

Guess I need not bother making them!

the Canadians brought actual cheese curds with them, they explained that the secrets to great authentic poutine are:
1. hand cut the potatoes
2. use real cheese curds
3. the gravy must be hot enough to melt the cheese

The knock-offs i've seen in our area typically involve using mozzarella which is akin to putting pineapple on pizza to a Canadian from what they told us.

Oh, and they made the gravy from scratch as well.

I've heard the Delirium Cafe in Leesburg has good poutine but haven't been there yet.

Let's talk Italy:

1. One of the (many) things we learned about Italian cuisine when we visited a few years ago is that Italians don't use ricotta in their lasagna, they use béchamel (a white sauce made from butter and flour).   We made this recipe over the weekend and loved it: https://www.walksofitaly.com/blog/food-and-wine/italian-lasagna-recipe,  the only change we made was to mix in some pecorino romano cheese into the white sauce based on some other recipes we saw that recommended doing so to give it more flavor).  It was incredible.  Another tip is to alternate the direction of the noodles to help the slices stay together when you cut them.  We used no-boil noodles for convenience, but fresh or homemade are recommended.

2. Stanly Tucci's new show on exploring Italian cuisine is fantastic so far.  Very reminiscent of Bourdain's show in that he lets the food and the locals tell the story.

I think bechamel is a northern italy thing.  My friend whose wife is from the top of the boot makes it that way for the holidays.  I think Federico's makes it that way, too.

on the Tucci show last night they used ricotta in Naples in a calzone (which was called a fried pizza), but that was about it.  From everything I've read, ricotta is not widely used in any part of Italy in lasagna.

Best I can tell is the ricotta thing originated with southern Italian immigrants who weren't schooled in the original recipe (that originated in Bologna) and used ricotta as a cheaper, easier substitute for béchamel. Ricotta was originally made from the whey leftover from making mozzarella.

I just prefer the béchamel version. :) And I served it with garlic bread, with is another American invention.

I forgot...you would have had experience with Chicago Style Pizza having been at Great Lakes NAS...

I never cared for it growing up, but have developed a taste for it in my golden years...  ;)
