Which model do you have?

I was in BJs earlier and they had the Pit Boss 700 FB for around $400.  It seems to have mixed reviews.

No idea what my model is (it’s about 10 years old now, but that looks pretty equivalent). In the summer it’s really good, it just struggles when the temp drops

Maine halibut? I thought the fishery was shut down? I know that, more or less, you can't get George's Bank cod anymore. I am surprised you can get halibut

Just checked the wiki. Halibut is only allowed as by-catch
bycatch. One halibut per trip.

Tonight’s scallops were easily the best we’ve ever had. The sauce didn’t work out quite right—a bit too thick—but the scallops themselves were fantastic.

We’ve been back in Virginia for a week or so. Waiting on a new air conditioner which is ok backorder due to the COVID 19.  Decided to take a drive up to Philly today as the wife said she missed having a real hoagie. The places I used to get hoagies are closed down and even the ones my Mom used to buy after I moved away have also gone. After looking up some reviews settled on this place.  Had a very nice Italian sun. Wife thought not enough meat but it was fine IMHO. The roll was the key. Hard on the outside and fresh inside.  Probably should have asked where they get the rolls from. I would recommend this place although it’s a bit out of the way from the tourist spots.  I paid only about $7 for a foot long Italian.

After visiting some old haunts we had our second lunch at Pats Steaks. Why Pats and not Genos.  Only because I found parking in front of Pats.  It’s been a long time and I was disappointed. I had a better one last week here in PWC. The steak was kind of tough and the roll was just ok.  Last time there we went to Jim Steaks in South Street. That was better. I might just try the Italian deli notes above for a cheesesteak as they have good reviews.

Found a tastycake lemon pie at Wawa so the day was complete. No carbs tomorrow.

There's a place in Old Town Manassas called Philadelphia Tavern that is supposed to be very good.

Had a cheesesteak there years ago. It was ok.  You can’t really get the same Italian rolls in this area.

Best rolls I’ve had in the area are at the Italian Store in Arlington, and DC Sandwich (bahn mi) in falls church.

Not a cheesesteak, but there's supposed to be a really good place for an Italian cold cuts sub around 8th St SE.  Anybody know the name?

We go to the Padrinos in Dale City.  The cheese steak is usually very good there.

Wegmans had some nice halibut fillets on Sunday, so I got two and made the following. It was pretty good and I will try it again. I cut the sauce recipe a bit because it said the recipe was for four, but that was a mistake because I still had around a pound of fish. I should have used the whole recipe. Other slight hiccup was that I didn’t remove the skin before cooking and it affected the sauce a little (and the aroma in our kitchen the next morning). Next time, I’ll remove the skin. The recipe calls for halibut steaks, but Wegmans had only fillets.

I made a gochujang glazed slow roasted chicken.  It was delicious.

Gochujang is a great asian spice if one likes spicy food on the hot side - and a touch on the sweet side

Isn’t slow roasted just a fancy way of saying baked?

Doesn’t roast imply high heat and bake lower heat?

Some people say this. But I cook biscuits at 425 which is as high as most roasted chicken recipes and I cook pizza at 500. No one says “I’m roasting this pizza”. I always thought it was the type of food and whether or not the cooking changed the shape of the food.

Just call it all oven cooking.
