Since I’ve got the time, I wanted to try a recipe I always wanted to. Turkish Manti.  Lamb dumplings with three sauces: Brown Butter, Caramelized Tomato sauce and garlic yogurt sauce.
Making the dumplings from scratch is incredibly time consuming.

I bought a dumpling maker (a cutter with two presses) for $15 from amazon, dumplings are still a pain in the ass. Even if you cheat and use egg roll wrappers they’re a pain. Looks good though

Can't stand asparagus ???

Have you tried roasting asparagus by spraying with butter, adding spices, and baking at 400 until asparagus is crisp ?

That sounds pretty good. I’m bookmarking that for some weekend when we have nothing to do.

Funny, we had lamb last night too. My mom came over for dinner and brought a rack of lamb with her. I didn’t do anything fancy to it, just some pink salt and Florida seasoned pepper before grilling it (five minutes over direct medium, then the rest of the time over indirect medium). The Weber iGrill Bluetooth meat thermometer I got last summer worked perfectly—I told it I wanted a target temperature of 130°, and the meat came out just right. It had been a really long time since I’d cooked rack of lamb, which is why I used the thermometer. Had I followed the timing recommendations I had, it would have been undercooked. Tasted really good. My wife made some potatoes and sautéed some asparagus; I can’t stand asparagus, so I didn’t eat that, but she and my mom really liked it.

ok, so I'm a notorious non-cook with no skills in a kitchen.  Opening cans of beans and salmon, chopping vegetables, throwing them over spinach is like the most I've done in about 5 years. This thing that's going on has forced me to at least try to prepare stuff at home.  Thursday I actually had 2 pans on the stove and the microwave going at the same time! and it all timed out right!

JCA - something simple to do:
Buy a piece of salmon, sprinkler lemon pepper on it & bake at 350 for 50-60min
Microwave a bake potato for 4 min, then put in the oven with the salmon.
Buy some green beans or asparagus, spray with butter spray, sprinkle with garlic pepper, then put in the oven with salmon.
Bake all 3 at same time - a gourmet meal that's easy to make

thanks. I will get more adventurous but that really isn't my goal. I am eating ok, but it's passover so my diet is more limited than usual. Your recipe would work, but I am not going back to the grocery for a week

If you’re looking for cook books- America’s rest kitchen or cooks illustrated- if you follow the recipes, they work. About as idiot proof as you get

This book is what got me into cooking. It’s easily the best cookbook I’ve ever bought. It made me see cooking as basic chemistry. That mad it much more compelling and much more easy to understand. It’s the Joy of Cooking for our generation.

I’d also recommend looking at the Serious Eats website. The main guy is the guy who wrote this book.

It’s in the same vein as America’s test kitchen and Cooks Illustrated. And Good Eats.

To further plug Serious Eats. I just cooked this Jambalaya recipe. It’s just as good as my Mom’s who was born and raised in Louisiana. It was incredible. And they described why it’s so flavorful.

Of note. They have not found a recipe that equals my Mom’s gumbo.

I made jambalaya tonight as well. Similar recipe but no shrimp as the kids don’t like it and I used a homemade Cajun spice blend. It’s really hard to make a bad jambalaya.

I need to try their ropa vieja and picadillo recipes. I have some others I make frequently. Cuban food is also pretty easy to make.

It does not destroy the salmon.  I've done this over 200 times. 

I’m assuming he meant 5-6 minutes?   

My go-to is blackened salmon. Heat a bit of oil, put the salmon skin side down, cook for five minutes, cover the flesh side in Cajun spice mix, flip and cook the spice side for five minutes. Easy-peasy

2IPAs loved this shrimp in a cream sauce on pasta.  One change I made to to replace the cayenne pepper & salt with blackened spice.
