To further plug Serious Eats. I just cooked this Jambalaya recipe. It’s just as good as my Mom’s who was born and raised in Louisiana. It was incredible. And they described why it’s so flavorful.

Of note. They have not found a recipe that equals my Mom’s gumbo.
