Well, don't tell a Manhattanite that water is water.  And don't ask me what is so special about Manhattan bagels vs. ones procured or constructed locally, cause I don't know.  I'm just dutifully reporting what the guy told me, and he was adament that his bagels were superior because of their lineage. 

I've heard that the water makes a difference but only the water that is used in the bagel itself.
