I don't know about these places, but two places that are in DC, that are relatively new and quite good are Timber Pizza in Petworth

I haven't used one, but I am not sure I would want to cook steak with it. Losing the sear/malliard reaction just doesn't work for me. On fish or chicken, sure. But not red meat. That said, because of the first four words of my reply, I could be totally, 100%, in the wrong.

We did a sous vide brisket that then went in the smoker for like 3 or so hours instead of the customary 12.  I can see why restaurants love it.

I finally got a new Weber gas grill after 16 years for the old one, and the new one has a sear station on it  For meats they recommend searing for say 3 minutes a side and finishing on low heat if necessary to finish cooking.  Haven't quite got the timing right now, they do overcook if not monitored closely.  3 vs 3.5 minutes is a significant difference.

I saw this recipe for waffles the other day and tried it this morning (Oct. 1). Supposedly it's Jackie Kennedy's recipe. Don't know whether I believe that, but I can certainly believe that President Kennedy liked this recipe. It produced super-fluffy, very light waffles. Only thing is, the recipe I usually use makes double the amount of waffles this one does, so we are used to having leftovers. We ate all of this and we weren't full. If we'd had some fresh fruit, that likely would have done the job.

My only edit to the recipe below is the text in brackets.

½ cup butter [<---Soften to room temperature or run it 30 seconds in the microwave]
1 tbsp. sugar
2 egg yolks
7/8 cup milk, or 1 cup buttermilk
1 cup plus 1 tbsp. of sifted cake flour [<----NOTE CAKE FLOUR, not all-purpose flour!]
1 pinch salt
2 stiff beaten egg whites
4 tsp. baking powder

1. Cream butter and sugar, add egg yolks. Beat. Add flour and milk alternately. This may be done at any time. When ready to bake fold in egg whites, and add baking powder. Mixture should be thick and fluffy.

2. Cook in a waffle iron and serve with hot maple syrup and melted butter.

Posting this in the "food" thread rather than fishing or news.  Bottom line - there's a lot of problems with farmed salmon.  Go wild or think about going without. 

Farm released 100,000 fish near seattle, and they are spreading as far as Vancouver.  Problem is, Seattle, Vancouver, etc... are on the Pacific, and these salmon are Atlantic and can mess up the gene pool.  Also, these things are nasty with sea lice, like most farmed salmon.  Don't really want that to get into the wild stock.  Finally, for the NoKo point, apparently Walmart and Aldi market some salmon dinners with fish from NoKo farms.

I did sous vide on my steak today. It turned out pretty well. Put the steaks In the bath for 2 hours and watched the game and then watched the game. It was completely passive. Then spent a total of 5 minutes searing both steaks in my cast iron skillet. Came out a perfect medium rare, which has been hard for me to achieve on the grill without constant attention. This was way easier. Next time I will do the sear on the grill. This could be game changing it was so easy.

Per Mathguy's request, this was delicious and easy. Next time going to substitute homemade pesto for the basil leaf, or maybe add spinach to make it healthier.
