Last weekend we were at Lowe's and I picked up a carbon-steel griddle for use on the grill. Tried it for the first time tonight with a pound of Maine halibut I cut into thirds. It worked great. Brushed the fish with olive oil, seasoned it with salt and pepper, got the griddle ripping hot, and cooked the fish six minutes per side plus 30 seconds on the other two sides just to sear them. Leftover yellow rice reheated in the microwave, some Maine salsa for the fish, and a bottle of Fox Meadow wine purchased at the winery today (we brought home 24 bottles; 23 remain). Excellent dinner to conclude a very nice day—when has it ever been this cool in July? Plus I got the griddle put away and the grill covered just before the rain.
