What is the latest on the Soto ankle injury? I apologize if I missed something.

Nothing really new.  This is from the Washington Post on June 5:

 "Right fielder Juan Soto and infielder Carter Kieboom, two of the organization’s top four prospects, remain on the disabled list. The 18-year-old Soto hasn’t played since injuring his right ankle on a play at the plate on May 2. He was batting .360 with a .950 OPS in 96 plate appearances before the injury. The 19-year-old Kieboom, injured his hamstring on May 12. He was slashing .333/.398/.586 at the time."
