I made one of my favorite recipes last night - shrimp ceviche. So easy and so good.
Here's my recipe:
1. Boil one pound of raw shelled shrimp for one minute, immediately transfer to an ice bath after 1 minute to stop the cooking
2. Chop the shrimp into 2-3 pieces each and add to a large bowl
3. Add
- 1 cup of chopped cilantro,
- 2 diced avocados,
- 1 cup of diced grape or cherry tomatoes,
- 1 cup of diced white onion rinsed in a strainer,
- 1 serrano chili pepper, diced, with seeds,
- salt / pepper to taste,
- 2 limes worth fresh squeezed lime juice,
Stir together to mix, put in the fridge for at least a few hours before serving, serve with blue corn tortilla chips
