Most bikes are going to have 32h hubs unless you either went with a higher spoke count because of rider weight (my case) or you're touring (the Big Dummy or tandem bikes) and will be carrying additional gear/riders. When you get into road racing most people go the opposite direction but that's usually accompanied by the riders weighting less than 175bs. I doubt I'll ever be able to go below a 32h hub but that's the breaks when you have a linebacker body regardless of weight.
In regards to the Shimano Deore - most of the Surlys and Salsas (they're both made by the same parent company) use that hub for their stock wheels and it's a fine hub if you weight less than 250lbs. It's a decent hub but not really strong enough once you get past 400lbs of total additional bike weight (i.e. rider and gear).
