I was watching them clean the waffle skillets at the Taste of Belgium restaurant here in Cincy. After cooking each batch of waffles they just had a rag and worked the rag around using a knife. Being careful to not have the knife touch the skillet.   I guess it worked because it was still hot?

Knife is a bad thing to contact a cooking surface.  Deadly on non-stick surfaces, and can scratch iron.
