I saw this recipe for waffles the other day and tried it this morning (Oct. 1). Supposedly it's Jackie Kennedy's recipe. Don't know whether I believe that, but I can certainly believe that President Kennedy liked this recipe. It produced super-fluffy, very light waffles. Only thing is, the recipe I usually use makes double the amount of waffles this one does, so we are used to having leftovers. We ate all of this and we weren't full. If we'd had some fresh fruit, that likely would have done the job.

My only edit to the recipe below is the text in brackets.

½ cup butter [<---Soften to room temperature or run it 30 seconds in the microwave]
1 tbsp. sugar
2 egg yolks
7/8 cup milk, or 1 cup buttermilk
1 cup plus 1 tbsp. of sifted cake flour [<----NOTE CAKE FLOUR, not all-purpose flour!]
1 pinch salt
2 stiff beaten egg whites
4 tsp. baking powder

1. Cream butter and sugar, add egg yolks. Beat. Add flour and milk alternately. This may be done at any time. When ready to bake fold in egg whites, and add baking powder. Mixture should be thick and fluffy.

2. Cook in a waffle iron and serve with hot maple syrup and melted butter.
