If the potato isn't overcooked and mushy, you can make a quick hash. Melt some butter (or fry up a slice of bacon and use the fat), dice up a quarter of an onion and brown it , you can add in some bell pepper or mushrooms if you'd like; dice the potato and filet, add them in, and stir frequently till warm, then stop stirring and let the potato brown and make a crust. Turn/stir , repeat. You're not really trying to make a solid thing like a pancake. Just trying to get more surface area crusted if that makes sense.
You might need to add more milk or a little butter depending on how much potato and how well done it was. Liberal amounts of black pepper. Salt to taste. Bonus points if you throw a fried egg on top ( even for dinner!).
