Speaking of Alton Brown, anyone ever try his oven method for making hard cooked eggs?
Baking sheet meatloaf works great.I tend to put in an extra egg to help keep it fromcracking apart
Hmmm. I've cooked meatloaf outside on the grill in the past, and it was great because the grease burned away and I didn't have to clean up, but I've stopped doing it as my recipe evolved due to fear of it falling apart and collapsing through the grill grate. Does an extra egg make that much of a difference?
I'm guessing he turns off the burner directly under the loaf. My smoker has the grates pretty separated from the firebox, so no flare-ups
When the missus does fancy stuff like that on the grill, she uses a metal type meshing over the grating. It lets the meat/whatever cook so that nothing falls into the grill (bricks) and the grease runs off.
We got a Lodge cast iron grill grate... very tight spacing. Would work great for meat loaf, fish, etc., and you get the grill grate sear marks. http://www.amazon.com/Lodge-Logic-Pre-Seasoned-Barbecue-Grill/dp/B00063RXLU/ref=sr_1_1?ie=UTF8&qid=1425404077&sr=8-1&keywords=lodge+cast+iron+grill+grate
I have a device that looks like this: http://www.bedbathandbeyond.com/store/product/cuisinart-12-inch-x-16-inch-grilling-platter/1016764590?mcid=PS_googlepla_nonbrand_serveware_&adpos=1o3&creative=39230274949&device=c&matchtype=&network=g&gclid=CMCW0IaYjMQCFZMkgQodJ2cAUwIt's enameled so clean up isn't a pain in the ass. Does veggies if you want to deplete the ozone.
I think some of the missus' concoctions would fall between the slots.

Heading out now to a local Japanese restaurant. Gonna write it up for the Dallas Observer. This marks my first-ever assignment as a food critic.
Go get 'em, Chico
How fun Houston! Post the link to your review!
