Baking sheet meatloaf works great.I tend to put in an extra egg to help keep it from
cracking apart

Speaking of Alton Brown, anyone ever try his oven method for making hard cooked eggs?

My wife and I are big AB fans and she hard boils eggs constantly. I can ask her to try it at some point and report.  That said, is there a reason why he does it? Water seems to get the job done.

Taste, but also easier for large batches

We usually by the Costco egg pallets. Four dozen in a pack. She'll often hard boil a dozen for her and the kids to snack on so it should be easy to get a test done.

Supposedly makes for a creamier texture as well.

I have one, works well when you only need 4 eggs.

Hmmm. I've cooked meatloaf outside on the grill in the past, and it was great because the grease burned away and I didn't have to clean up, but I've stopped doing it as my recipe evolved due to fear of it falling apart and collapsing through the grill grate. Does an extra egg make that much of a difference?

Egg is the binder in most meatloafs, for my recipe, it really helps. I started doing it when I tried smoking meatloaf (which is really good) and it seems to help in the oven to. I put a pan under it to smoke though

Holy crap that grill must have been a serious blaze with as much grease that comes out of a decent sized meatloaf

I'm guessing he turns off the burner directly under the loaf. My smoker has the grates pretty separated from the firebox, so no flare-ups

When the missus does fancy stuff like that on the grill, she uses a metal type meshing over the grating.    It lets the meat/whatever cook so that nothing falls into the grill (bricks) and the grease runs off.

Exactly. When I do meatloaf in the oven, I have the oven set to 350, so when I did it on the grill I turned off the center burner and set the front and rear burners to medium so as to regulate the heat as close to 350 as possible.

I use one egg when I make it....will have to try using two next time to see if it makes a difference.

We got a Lodge cast iron grill grate... very tight spacing. Would work great for meat loaf, fish, etc., and you get the grill grate sear marks.

The ace hardware near me has cast iron grates for steak- the things are two inches high with thick grates, the look like they could hold a lot of heat for searing

I think some of the missus' concoctions would fall between the slots.    She uses a meshing for all the stuff she cooks   ....   meatloaf, veggies, kabobs, fish  ....

Looks more like this:

I have a device that looks like this:

http://www.bedbathandbeyond.com/store/product/cuisinart-12-inch-x-16-inch-grilling-platter/1016764590?mcid=PS_googlepla_nonbrand_serveware_&adpos=1o3&creative=39230274949&device=c&matchtype=&network=g&gclid=CMCW0IaYjMQCFZMkgQodJ2cAUw

It's enameled so clean up isn't a pain in the ass. Does veggies if you want to deplete the ozone.

We have two in case one sits outside for 2 weeks before I notice and the salmon skins need to be brillo pad removed.

But yeah, fish and veggies work well on those.

I still can't figure out what happened with that failed polenta that time, melted through the grates.    :hang:
