400 might be the "safe" temperature, but I've put mine in the oven at 500 before. I'd experiment to see how high it can go.

So if it cracks in half, dial back the temperature 25 degrees the next time you use it?     :lol:

Can o' tuna, a bit of mayo, some mustard, onion, and a healthy dose of sriracha.  Didn't think it'd be good, but best damn tuna sandwich ever, and a decent lunch when paired with some fruit and veg (13 points)

I just had a variation of that with Canadian bacon instead of tuna.  Sourdough bread, sharp habanero cheddar, and Sriracha.  How can something so simple be so good??

I heard a pretty ballin' recipe where you mix tuna with spices like that, throw some cheese over the top, and throw open-faced sandwiches under the broiler for a gooey melty cheese tuna melt.

Fish sauce is great. However, the stuff I have is EXTREMELY potent - I have to use less than half of what a recipe calls for. What brand of fish sauce do you use? I want to make sure the next stuff I get is less strong.

Grill pan is ready to go, got a steak to cook on it tonight for dinner.  We'll see how non-stick it is and how well it makes a steak.

Any specific way to go?  It's only a thin small one (diet and all).  Go fully on the stove or swap into the broiler after searing?  I'm thinking it's too thin for that really.

for thin, sear one side, flip, repeat, let it rest , enjoy

Yeah, don't mess around with it too much. If it's thin maybe 2-3 minutes a side. Make sure you salt and pepper it beforehand.

It's reaaaaly thin, 2-3 minutes sounds like it might be too much.  Like 1/4" or so.  it's actually from a box of 6, frozen vacuum packed steaks. :-[

No reason to  :-[. You still may need like 2 min per side, no biggie, just make sure you season. I myself am a fan of thin steaks, if you have time to marinade even better. Some teriyaki or lime juice is your friend.

Nothing wrong with frozen, I've reached the point where I buy big steaks from costco, cut into thirds and freeze

Has anyone tried marinading steak in soy sauce & season pepper ?  It gives a great salt & pepper flavor to steak.  Marinade on both sides for 2 minutes before grilling.


Pretty sure it's these things, I'll have to check the freezer when I get home :lol:

That sounds really good.  I'm surprised at the veg shortening instead of butter, though.  I guess I always associate cookies with gobs of butter.
