If you have a three burner grill turn the outside burners on and cook in the middle.  This works very well when cooking delicate meats.

Get a Weber kettle grill, then use the indirect method (pushing coals to the sides)

Or if you insist on going with what you got, make sure the hot coals are pushed to the sides, not directly under the meat.  Ribs should be cooked slowly over a long period of time anyway, never with direct heat underneath.  And if you have a drip pan, this can be prefilled with some water so you have a steam release going on.  Place this between the coals on the bottom (coal) rack.

If you're into charcoal, get the 22" Weber AND the rotisserie attachment. Be sure to get the model that has an ash catcher that looks like a pan and not a plate.

craigslist. i bought a decent weber gas dealie for like half off. my gf thinks the guy cooked human meant on it, but whatever, i burned that crap off

we have tried that and have one of the machines, but it's hard to find the right kind of flour.

Harris Teeter carries Durum Semolina but you can get the same grind (finer than regular flour) using any cake flour for about half the price. I use regular all purpose flour.

yep. I use King Arthur, but that's because they are 200+ years old and employee owned.
