That's exactly what makes them MORE interesting to watch, then everyone throwing the same way all the time.

Back in the day, American pitchers too had diverse and unusual motions, often developed in sandlot ball in their home towns, before being "discovered".  Now, pitching instruction is so uniform and generic, that the individuality is lost.  Asian pitchers attempt to disrupt the timing of a batter through making their motions less consistent from pitch to pitch.

The Asian pitchers got nothin' on Tiant and Marichal.

I'd have streaks of gray too if I'd left my wife and kid after trying to defect with them once already and had to sneak out on a boat before getting here.  That's got to be awfully tough emotionally and mentally.
