is there any way to modify the mobile site settings so that it displays more than 3 posts per page?
It's 5 per page, but no, not that I know of. I could dig into the code and look, but I'm guessing they kept it low in order to ensure compatibility with low-memory devices (dumbphones) and to keep page load times quick.
