Ricotta or cream cheese?

I love a moist cheesecake, and use cream cheese. My girlfriend is Italian and did ricotta. Delicious, but not the same. Missed the moistness. Had to always have a big smile splashed on my face whenever she made it.   ;)

I make a good chocolate cheesecake, with cream cheese

Made Pumpkin Cheesecake last night and had some with lunch today - delicious! Turned out awesome for my first time making cheesecake :) it was a request from one of my roommates.

Gonna cook my turkey in a Brinkman electric smoker, partly to keep the oven free for the various side dishes.  This year, simplicity.  A few boughs of fresh cut sage laid over top.  An apple and a celery stalk chopped up and stuffed inside, which will not fill the cavity of the 14.25 lb. bird, thus expediting cooking time. 

I'm going to use a bit of hickory to smoke the fire, but not too much.  If it was just for me I'd ramp up the chips but not everyone likes extra flavors in the turkey.  I'm going to skip the brining this year too, the water pan ought to keep it plenty moist.

Going to start at 9, supper is at 3:30, I expect the turkey to be done by 2-2:30 but need a margin.   That's the plan anyway.

Just gotta make sure not to get too liquored up when it counts....    :glug:

Found mom's old ass cast iron skillet.  What do I need to do to be able to use it?

So talking with the family at Thanksgiving I find out that this pan is actually my great-grandmother's pan.  Doing a little research online, it's old.  It's got a "WAGNER" marking on top with Sidney below and O under that with an 8H at the bottom.  Not Wagner Ware, just the Wagner name.

The lack of the ware means it's at least pre 1922, and some of the other things it has like the "heat ring" points to a likely date range being around the turn off the century.  So it's like 110 years old :shock:

That's so cool but now I don't know if I want to do anything with it or not.

had the absolute best turkey i've ever had tonight, used this brine for about 18 hours, then cooked it using Alton Brown's method and his aromatics.

Use a scouring pad and water if it needs more work and scrape with a metal spatula/knife/etc. No soap. However if you use water dry thoroughly and put it on heat to evaporate all water, prevents rusting.

And the you have to season/reseason it :)

Thanks everyone for all the fantastic cooking advice! I ended up with turkey duty and assigned to cook some side dishes, and the turkey turned out GREAT! I got a lot of compliments and my family spent about half of thanksgiving bragging about my culinary skills and how much they miss my cooking. We had a lot of fun! And thanks for helping me make my first turkey a winner :thumbs:

I will need to try some brine recipes with the Christmas turkey!

It has a bit of bite too it so far, but I'm about 2hrs or so of quality crockpot time before it's going to be eaten. I have about 10 habeneros, 1 jalopeno, and an assortment of other peppers that I'm not sure of. I love spicy food.
